Cooking and things...

I was just thinking about what dessert I should make for supper this evening. I was racking my brain to find something that sounded good, and was having a difficult time choosing. Then, my brother sent me a Snapchat of my Grandma's Rhubarb Upside-Down Cake. Yes. Decision made.

I don't think you understand how amazing Grandma's rhubarb upside-down cake is. It is my favorite dessert topping both apple pie and hot brownies. Don't take my word for it though. Give it a shot! Without further ado, I present the recipe for Grandma's Rhubarb Upside-Down Cake.


Ingredients:

A few stalks of Rhubarb (I use about three) chopped
1/3 C white sugar
1/3 C brown sugar
2 Tbsp butter

1 1/4 C flour
3/4 C sugar
2 tsp baking powder
1/2  tsp salt
1/3 C shortening
1/2 C milk
1 tsp vanilla extract
1 egg

Instructions: 

Spray a 9x9 or baking dish and preheat oven to 350 degrees. cover bottom of dish with chopped rhubarb. Mix in sugars and dab with butter. Set aside. In medium to large bowl combine all the rest of the ingredients. Pour on top of rhubarb/sugar mixture. Bake for 30-45 mins. Once cake is cooked, remove from oven and allow to cool on counter for 5-10 minutes. Run knife along edges to loosen cake. Flip onto plate and allow to cool fully. Cut and Serve.


Sorry there is no picture of the cake, but I can never wait long enough to take a picture before eating it. Seriously, this is my favorite thing. I could probably eat a whole cake in one sitting (that's not to say that I wouldn't regret it later). Pro-tip, its better the second day after it is completely cool. I enjoy pairing it with vanilla ice cream or eating it for breakfast. 

The cake is really easy to make and is a real crowd pleaser. It's never as good when I make it, compared to when Grandma makes it. I have a sneaking suspicion that when she gave me the recipe she left out a secret ingredient. If I ever find out her secret I will be sure to update the recipe!
